First of all…what is gluten?
Gluten is a general name for the proteins found in wheat, rye, barley and triticale – a cross between wheat and rye. Gluten helps foods maintain their shape, acting as a glue that holds food together. Gluten can be found in many types of foods, even ones that would not be expected.
You’ve probably heard of the common disease associated with gluten, known as Celiac Disease. Celiac Disease is a serious genetic autoimmune disorder where the ingestion of gluten leads to damage in the small intestine. It is estimated to affect 1 in 100 people worldwide. Two and one-half million Americans are undiagnosed and are at risk for long-term health complications.
Another condition associated with gluten is Gluten Intolerance or Sensitivity. Gluten sensitivity or intolerance is a condition that causes a person to react after ingesting gluten, a protein found in wheat, barley and rye. Symptoms can include gastrointestinal problems, joint pain, fatigue and depression among many more.
The purpose of the 28 Day Reset from Blogilates is to discover what foods your body is sensitive to. For 28 Days you avoid gluten, dairy, added sugar, processed foods, and alcohol. While on the reset, I experience less bloating and fatigue, and instead felt more energetic and slim! In the past, I had always noticed my body was more sensitive to bloating than the average person, but I didn’t think the foods I was eating had much to do with it. After my 28 day experience, going back to gluten brought back all those awful feelings. I decided then that my body was better off without it. After all, food is better when it makes you FEEL good!

Van’s Gluten-Free Waffles
My favorite kind are the ones with ancient grains. They are a great option for breakfast if you are short on time! Simply pop them in the toaster, add your favorite toppings, and breakfast is served! I like to put fresh or frozen berries on top and drizzle a little honey! Another great combo is almond butter with bananas. Mm mm! Add a side of scrambled eggs for some morning protein!
Rudi’s Gluten-Free Spinach Tortillas
These spinach tortillas are so versatile and so delicious! For breakfast I’ll wrap scrambled eggs and salsa in a tortilla and have a little breakfast burrito. For lunch, I’ll throw chicken and greens inside for a nutritious wrap! My favorite combo is when my mom makes her turkey and 3 bean chili. I’ll rip my tortilla up into small pieces, throw in some spring mix, and mix them both in with the chili until they are nice and warm. The tortilla gets to such a satisfying texture once soaked in the chili. My mouth is watering just thinking about it!
Simple Truth Organic Blue Corn Tortilla Chips
These chips are my new addiction, watch out! You never want to sit down with the whole bag in hand. It will disappear quickly, trust me. Pair these chips with Simple Truth Organic Salsa and your taste buds will dance. I also like to crumble them up on top of a salad to add a little crunch! They can be used for taco salad as well. Personally, I like to eat them plain. The flavor of the chip itself is so good!
Mi-Del Gluten-Free Ginger Snaps
Oh. My. Goodness. For this one, I’m totally not sorry. After all, this post is about gluten-free not sugar-free, right? These cookies are wonderful if you love ginger snaps! They are crunchy and slightly chewy at the same time! A serving size is 5 which I think is generous, but just like with those chips, don’t sit down with the bag in hand. You WILL eat them all.
Pamela’s Gluten-Free Baking & Pancake Mix
If you love to bake and love to eat pancakes, there IS a gluten-free solution! Pamela’s is one of many gluten-free baking mixes on the market. This is the one my mother buys and I love it! We like to make banana bread and muffins with this mix. They taste just as delicious as regular baked goods!

Gluten-free, dairy-free, and organic foods are in higher demand then they ever have been. If you love carbs like I do, but want to kick gluten to the curb, try these out!
